It also carries a post-harvest step ginger does not: rhizomes are boiled or steamed and then dried before polishing, which gelatinises the starch, fixes the colour through the rhizome and is what distinguishes cured turmeric from simply dried rhizome.
Harvest
Rhizomes are lifted by hand once pseudostems have dried and senesced, typically several months after planting, and are then commonly boiled, sun-dried, and polished before being ground into the familiar spice powder.
