Sage forms a compact, spreading subshrub with distinctive velvety, gray-green leaves and is one of the most widely grown culinary members of the large Salvia genus.

The plant is adapted to hot, dry, sunny conditions typical of its Mediterranean origin, and cultivated forms range from common culinary sage to ornamental cultivars with variegated or purple-tinged foliage.

Overview

Sage leaves are thick and hold moisture, so they dry slowly and are the part of the crop most often lost to poor post-harvest handling. Drying too fast browns the leaf and drives off volatile oil; drying too slowly allows mould in the stacked leaf.

As a woody-based perennial, sage can remain productive for several years, though plants tend to become woody and less productive with age, benefiting from periodic renewal.

Origin and distribution

Sage is native to the northern Mediterranean coast, where it grows wild on dry, rocky, sunny slopes. It has long been cultivated as a culinary herb across the region and has since spread to temperate gardens and farms worldwide.

Commercial production for fresh, dried, and essential-oil markets occurs across Mediterranean Europe and in other regions with a compatible climate.

Climate and soil requirements

Sage carries dense leaf hairs that cut water loss and give the foliage its grey cast, which is why a sage plant looks unstressed in weather that wilts a basil beside it. Hardiness is the more variable trait: garden sage takes moderate frost in most temperate plantings, while the ornamental and tender Salvia species sold under the same common name do not, and the difference matters when a planting is expected to overwinter.

Well-drained loams and sandy loams of low to moderate fertility suit sage well; humid, poorly drained, or overly fertile conditions can promote excessive soft growth and increase disease risk.
